I have a thing for breakfast. Well, mostly breakfast foods. I could eat them morning, noon and night and not get tired of them. And one of the things that I love baking most of all are muffins. I think it’s because they are easy, no-stress, and not pretentious at all. These muffins bring in the flavors of fall with sweet pears, and a bit of crunch with some granola added into the muffins, as well as topping the muffins. They are perfect for breakfast or for an afternoon snack! Pear Granola Muffins makes 18 muffins 1 3/4 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1 teaspoon cinnamon 2 eggs 3/4 cup packed brown sugar 1/2 cup plain yogurt 2 tablespoons butter, melted 2 cups diced pears 1 1/2 cups granola, divided Preheat oven to 400F. Line 18 muffin tins with paper liners. In a large bowl, whisk together the flour, baking powder, salt and cinnamon. In a separate bowl, whisk together the eggs, brown sugar, yogurt and butter. Stir the dry ingredients into the wet ingredients. Fold in the pears and 3/4 cup of the granola. Fill each muffin cup 3/4 full. Sprinkle the remaining 3/4 cup of granola over the tops of the muffins. Bake until a toothpick inserted in the center comes out clean, 15-18 minutes.
