Baked Pizza Casserole

I am not one that loves the cold. Especially the bitter cold temperatures we have been having lately. But one thing I always love about winter is the excuse to cuddle up inside with some good comfort food to keep you warm.

This pasta casserole is sure to do just that. And it doesn’t hurt that it is only 6 ingredients. My kids are huge pizza fans, but you can only have so much pizza every week. This was a great way for them to get their pizza fix, and for me to try out something different!!


Baked Pizza Casserole

serves 6

9 oz uncooked rigatoni
1/2 lb ground beef
4 oz pepperoni, chopped
1 (2.25 oz) can sliced olives
30 oz pizza sauce
4 oz shredded mozzarella cheese

Preheat the oven to 350F. Bring a large pot of salted water to a boil and cook pasta until al dente; drain and reserve.

Meanwhile, cook the ground beef in a large skillet until no longer pink; drain. Stir in the pepperoni, olives and pizza sauce. Pour into a 2 1/2 quart baking dish. Cover with foil and bake for 30 minutes. Top with the shredded mozzarella and return to the oven, uncovered. Cook until the cheese is melted, about 5 minutes.
