The brown banana. It’s been an epidemic around our house lately. I’ve done everything I can think of with the things – cookies, muffins, cake. You can always go with regular ol’ banana bread, but it’s so much more fun to change things up, right?
This banana bread comes together in a jiffy, and is definitely different than your usual bread. The addition of oats gives it more texture and the blueberries go so well with the banana. It’s easy and fast to throw together, and your house smells amazing while it’s baking. This may very well become your new go-to banana bread!
Blueberry Banana Oat Bread
makes 1 loaf
2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon salt
2 tablespoons butter
3/4 cup quick oats
2/3 cup sugar
1 cup mashed ripe bananas
1/4 cup milk
1 cup frozen or fresh blueberries
Preheat oven to 350F. Spray a 9×5 inch loaf pan with nonstick cooking spray.
In a medium bowl, combine the flour, baking powder, salt and butter. Use a fork or pastry cutter to cut in the butter.
In a large bowl, stir together the oats, sugar, bananas, milk, eggs and flour mixture, just until moistened. Fold in the blueberries. Pour batter into the prepared pan.
Bake for about an hour, or until a toothpick inserted in the center comes out clean.
