Baked Beans with Bacon

You can’t have summer without backyard bbqs. And you can’t have a backyard bbq without baked beans, right?

I was recently on the lookout for some great baked beans that were something a little bit different, but would still be perfect for a backyard bbq and a crowd. I found it in these beans! These are super simple to throw together and have a ton of flavor. The secret is the horseradish. Even if you aren’t normally a fan of horseradish, you’ll probably still love these beans!

Baked Beans with Bacon

serves 8-10

1/2 pound bacon, cut into 1/2-inch strips
1/2 cup chopped onion
1 can (15.5 oz) Great Northern Beans, undrained
1 can (15.5 oz) white beans, undrained
1 can (16 oz) kidney beans, rinsed and drained
3/4 cup packed brown sugar
1 tablespoon prepared horseradish
1 tablespoon prepared yellow mustard
salt and pepper, to taste

Preheat the oven to 325F.

In a Dutch oven or other large, oven proof pot, cook the bacon until crisp. Remove with a slotted spoon. Drain, reserving 1 tablespoon of the bacon drippings. Add the onion and cook until soft. Stir in the beans, brown sugar, horseradish and mustard. Stir in the reserved bacon. Season to taste with salt and pepper.

Transfer the pot to the oven, cover and bake for 30-35 minutes. Remove the lid and continue cooking until you reach the desired thickness.
