If there is one thing I can never have enough of, it’s recipes that use those overripe bananas. We buy bananas just about every week, because my kids love them, but we have a hard time always making it through the whole bunch. We have plenty of banana bread, but sometimes, it’s fun to change things up. Especially when that change is in the form of pancakes.
These pancakes are a chocolate lover’s dream. Both chocolate and chocolate chips, with that banana goodness that runs through them. They are definitely a sweet treat, but a fun change up to your breakfast routine!
Chocolate Banana Pancakes
makes 10-12 pancakes
1 cup plus 3 tablespoons flour
1/3 cup cocoa powder
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups milk
1/4 cup butter, melted
1/2 teaspoon vanilla extract
2 bananas, roughly mashed
1/2 cup miniature chocolate chips
Heat a griddle over medium heat.
In a bowl, whisk together the flour, cocoa, sugar, baking powder and salt. In another bowl, mix together the milk, butter, eggs, vanilla and bananas. Combine the wet ingredients and the dry ingredients and mix just until moistened.
Butter the skillet and then ladle 1/4-cup of the batter onto the hot skillet. Cook until bubbly, then flip and cook the second side. Serve with warm maple syrup.
