Our Executive Chef Ethan Kawasaki spends countless hours testing and developing recipes that will become masterpieces. With inspiration from world travel and diverse flavors found across the globe, his work captures the essence of that inspiration while also making it unique to Cafe Zupas.

We wouldn’t ever dream of warming a soup from a bag, and we’d never settle for bottled dressings or sandwich spreads. We make them in each restaurant every day. No strange ingredients, and no preservatives. It’s an extra mile, but we’re happy to take it to bring you a fresh House-Made meal that simply delicious.

WEST-COAST BABY FEILD GREENS
We source special breeds of Lolla Rosa, Batavia, and Red Oak Lettuces from the Salinas Valley in California. They are harvested early for optimal taste and forkability, and their robust flavor and delicate texture compliment our flavorful House-Made dressings.
ALL NATURAL CHICKEN
Our grilled chicken is fantastically simple with just four quality ingredients: chicken, salt, olive oil, and lemon juice. No fillers or preservatives here. You’ll find it featured in many of our soups, salads, and sandwiches.
CAGE FREE EGGS
We’re committed to the best ingredients available, like our premium cage free eggs. The chickens are allowed to roam and forage, producing delicious eggs – and we love that it’s more humane.
Hass is a variety of avocado known for its consistency in size and buttery flavor. We serve it as it comes from the tree – free of any preservatives or extra flavorings.
Smooth, creamy, and straight from Green Bay. It’s a bright and tangy addition to our salads, and is also a great option for those with lactose intolerances.
A variety of baby soy bean that is nutritious with lots of protein. Edamame is a delicious addition to our Asian Citrus Chicken and California Protein Cobb Salads.
TUSCAN BLACK KALE
As nutritious as it is popular. Our variety is a Tuscan Black Kale – it’s tender, mild, and easily the best kale you’ve ever tried. You’ll also love the healthy splash of color and texture it adds to our Roasted Veggie & Quinoa soup.
Sharp, salty, and slightly nutty in flavor. We love its upscale flavor, and also love how beautiful the large shavings look on our Kale and Quinoa Salad.
TRI-COLORED QUINOA (keen-wah)
Quinoa is having a big moment, for a big reason. High in protein, essential amino acids, and B vitamins, and one of the most nutritionally complete foods in the world. Ours is from Yakima Valley, Washington, and we love the nutty and earthy flavor. Doesn’t hurt that it’s pretty to look at, too.
There’s just something magical about watching whole, fragrant basil transform into our special pesto. Every morning we hand pick pounds of leaves from the stem, and blend with quality virgin olive oil and almonds. You’ll find it in our famous Tomato Basil soup, Pesto Chicken Sandwich, and Ultimate Grilled Cheese.
SUGAR SNAP PEAS
Sweet, crunchy, and best enjoyed pod-and-all. They’re sliced in our kitchen and add a nice little pop to your salad.
Officially called Persian cucumbers, and they’re nutritious and sweet. These cucumbers are a part of our daily produce deliveries, sliced in our kitchen for a crisp addition to our salads and sandwiches.

The honey dressings and spreads you love start with the very best, pure ingredient, straight from our favorite family-owned farm in the mountains of Idaho.
PREMIUM CENTER-CUT APPLEWOOD SMOKED BACON
Made just for us by Daily’s Premium Meats, our bacon’s natural smoky flavor is straight from the applewood curing process Daily’s is known for. And we don’t joke around with bacon; even the crumbles used on our salads or as soup mix-ins come from center-cut slices.
SIGNATURE SPICE BLENDS
These treasured secrets to our House-Made soups, salad dressings, and sandwich spreads are the result of years of development and testing. Assembled from top-shelf spices, and unique to Cafe Zupas – they’re a big reason our soups taste incredible.
We bring Gala apples in whole from Yakima, Washington because they are crisp and sweet and oh-so-juicy. They’re sliced in our kitchen daily, and they make the Strawberry Harvest Salad positively wonderful.
We’ve partnered with Premium Nut Co. in Chula Vista, CA to deliver the best possible product to our specifications. Our sliced & roasted almonds are produced with a special process to roast them after they are sliced. Our chopped cinnamon almonds are a Cafe Zupas icon –a key ingredient on our famous Nuts about Berries and Mangoberry salads.
